We are working on a breakfast menu for our Borough Market stall on Saturdays to feed all the early birds as we're open for business at 0800 and we think it's time to see some delicious healthy plant based options, perhaps we can persuade a few more people to have a meatless high protein breakfast start to their day.
I'm having a home day today, I really like to take care of myself, I'm not one of those people who forget to eat when they're home alone! I have just prepared the most delicious courgette omelette for my breakfast using Hodmedods fine ground yellow pea flour, I like to use this rather than gram flour as this yellow pea flour is grown and ground in the UK and we're all about sourcing our ingredients locally, it also has a lighter texture than gram flour. The addition of baking powder really lightens up the omelette too...
You can use the batter for any vegetable mix, grated is best as it cooks quickly... We've made other versions before with sweet corn, jalapeños and green peppers or mushrooms, it's a great egg alternative as it's high in protein with the addition of being fibre rich you're winning if you choose yellow pea flour over eggs for your omelettes! And so are all those happy hens!
1 coarsely grated courgette
1 finely chopped shallot
salt & pepper to taste
a good dash of cayenne
1/2 cup of finely ground yellow pea flour
1/2 a cup of filtered water
1/2 a tsp baking powder
Mix all ingredients together and lightly brush your oil of choice on a non stick pan, I use a cermamic green pan be careful as they are VERY sensitive and lose the non stick coating if you scrub too hard. Pour in the mix or make smaller versions as in the photo.
Serve in a bun for a breakfast sandwich or on a plate with some sautéed spinach and mushrooms..
